Independent food businesses often carry deep personal histories, but their everyday work disappears the moment the food is served.

Why we do this

Small food businesses shape how cities are experienced. Often quietly.

They are part of the streets people walk through, the smells they remember, the routines they build, and the places that make a neighborhood feel alive.

Many food businesses are built on highly skilled, physically repetitive, and time-intensive work that often becomes invisible once the food reaches the table.

We document that gap: the space between what people consume and what they rarely witness. Not through marketing language or polished narratives, but through close observation and visual interpretation.

These businesses often carry a strong personal rhythm, a distinct process, and a relationship to migration, memory, inheritance, or place.

This project began with a simple observation: people often enjoy the final dish without seeing the structure of labor behind it.

Before Served exists to make that structure visible — to show the hands, systems, routines, histories, and quiet expertise that shape the food before it is served.
